Dinner #5, 31/1/11

Ok, so my diet didn’t exactly start today, since I did make waffles for breakfast…

My baby is home sick today so I was able to take my time and invest, especially since my daughter’s first request upon waking is “mommy I want cake”.

Now I have all day to think of what to make for dinner, need something budget friendly, with stuff I already have in the house…and came up with vegetarian chilli and rice.

So simple, just cut up an onion, fry till clear, add drained can of chilli style beans, can of crushed tomato (cos that’s what I had, but I usually use tomato paste and some water), spices: garlic powder, oregano, parsley. Bring to boil, lower heat and cook for 30 min or so. Also I usually add mushrooms and red peppers but I didn’t have those in stock, turns out good either way..I hope 🙂

Better go check on rice, don’t want to burn it again.


Dinner #4, 30/1/11

So Sundays are dad’s turn to try his hand…and frozen pizza it was. Now don’t laugh and dismiss the idea as an easy solution.

Hubby likes to invest his time and creativity when it comes to the basic frozens. First with the olive oil and garlic powder he places on the baking sheet so that the crust will be special. Next are the onions, mushrooms and any other vegetables we have lying around, fried with (lord-help-my-diet) butter, topped with spices.

I dare say it’s better than most pizza’s we’ve ordered in the past, at just the fraction of the price.

Diet starting again tomorrow, promise!

Dinners #2+#3, 28-29/1/11

I am always in search of new and FAST things to make for the weekly weekend meals.

For one particularly fun weekend we were staying by friends in Efrat (you know who you are) and by chance happen to be there early enough to participate in their cooking experience, thus adding to my collection the never-fail meatballs recipe, which I made for this weekend.

Now usually I purchase expensive imported tomato sauce for this but as I was out of it, and due to my new frugality did not want to purchase it, I improvised with regular tomato paste, some sugar and water, spices and you know what? It was so good I was craving it for breakfast the next day….

Here is the recipe, thank you Andi Leubitz:

1 kg ground meat (I use ground turkey and it’s still great)
1 Large or 2 small eggs
1/4-1/2 cup matza meal
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika

mix everything together, make into balls, no bigger than 2-3 cm (1″) in diameter. if it is the size of a golf ball, it’s too big, split in half!
then on a baking sheet on your baking tray put them on, and bake, YES BAKE! for about 15-25 min until slightly brown.

Next in a pot, put in tomato sauce of your choice, or if you wish, a can and a half of tomato paste, about 3/4 cup water, basil, oregano, garlic powder and parsley, about 1 TBS of each, mix in 1/2 cup of sugar (brown preferable).

Put meatballs in pot, simmer for about an hour

Oh, and I also made some rice which I somehow managed to burn, with some healthy helping of endamame with some lemon juice/olive oil dressing.

To be honest we went to a friend’s house so there was no need to make dinner, especially since all my efforts the night before were not eaten!! forgetful boo! but I did get a chance to eat it last night and it was YUMMY!

In my new attempts to budget food and meals I was in search of an easy site to let me enter recipes and create menus and shopping lists. I came upon which is a cute site, very user friendly and easy to navigate and find what I want without being overwhelmed with information to confuse me.

It was on this site that I found a great recipe to update the usual pasta and sauce routine I’ve been doing for years. Please check out: His Hearty Sweet Potato Pasta. This dish is very hearty and filling and great for a cold winter day.

So now I actually have to get some strength and get up to make this….

Due to my new resolution to actually cook meals for my family, and due to the fact that I am not always up to it, I figure what better way than to blog about it, thus forcing me to actually do it.

So welcome to the first night of what I hope will be most if not all nights for the rest of my life! talk about daunting….
